Galileo's is the creation of Anne and Mark Dixon, who set out to make a fun and relaxing place that the whole Boone community can enjoy. The journey began in late 2007 with the purchase of the old Austin City Limits building. The building, which was built by Boone local, Laverne Fox upon his return from World War 11, had been vacant for several years and required massive renovations to become a usable space again. With the support of family and the help of Todd Pearce Construction, the building was renovated and ready for opening day, June 22nd, 2009. With a menu that runs the gamut from breakfast specialties, like our Ham & Havarti Croissants to great late night snacks like our Quesadillas, (made with imported Texan salsa!) Anne and Mark hope that Galileo's is a place where people will stop in for a bite whenever the mood hits them.
